Spaghetti Carbonara with Bacon
Ingredients
- 200 g spaghetti
- Parmesan
- 3 egg yolks
- 1 tablespoon butter
- 2 tablespoons olive oil
- Freshly ground pepper
- 2 tablespoons salt
Preparation Steps
- Heat a large pot with at least 3 liters of water. Salt it, then add the pasta after 1 minute. Cook on high heat according to package instructions until al dente.
- Cut the bacon into strips or cubes, grate the Parmesan finely. Lightly whisk the yolks with cheese and season with pepper. Add 1.5–2 ladles of boiling pasta water and mix.
- Melt butter and 1 teaspoon of olive oil in a pan, add bacon, and cook until crispy. Drain the pasta, reserving the water. Add pasta to the pan, add 1 ladle of water, stir, cook for 1 minute, remove from heat, and let rest for 2 minutes. Pour in the yolk mixture and mix to create a smooth sauce coating the pasta. Divide onto plates and sprinkle with Parmesan.
