Spaghetti Carbonara with Bacon

Ingredients

  • 200 g spaghetti
  • Parmesan
  • 3 egg yolks
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • Freshly ground pepper
  • 2 tablespoons salt

Preparation Steps

  1. Heat a large pot with at least 3 liters of water. Salt it, then add the pasta after 1 minute. Cook on high heat according to package instructions until al dente.
  2. Cut the bacon into strips or cubes, grate the Parmesan finely. Lightly whisk the yolks with cheese and season with pepper. Add 1.5–2 ladles of boiling pasta water and mix.
  3. Melt butter and 1 teaspoon of olive oil in a pan, add bacon, and cook until crispy. Drain the pasta, reserving the water. Add pasta to the pan, add 1 ladle of water, stir, cook for 1 minute, remove from heat, and let rest for 2 minutes. Pour in the yolk mixture and mix to create a smooth sauce coating the pasta. Divide onto plates and sprinkle with Parmesan.
