Ham Muffins with Corn and Cheese

Ingredients

  • All-purpose flour: 150 g
  • Baking powder: 1 tsp
  • Salt: pinch
  • Eggs: 2
  • Milk: 100 ml
  • Olive oil: 50 ml
  • Corn: 100 g (can be canned or fresh)
  • Hard cheese: 100 g (grated)
  • Chives or spring onion: to taste (finely chopped)

Preparation Steps

  1. Prepare the batter: In a bowl, mix flour, baking powder, and a pinch of salt. In another bowl, whisk eggs with milk and olive oil.
  2. Combine ingredients: Gradually mix the flour mixture into the liquid mixture until a smooth batter forms. Then add chopped ham, corn, grated cheese, and chopped chives or spring onion. Stir gently.
  3. Baking: Prepare a muffin tin and either grease each cup with oil or line with paper cups. Fill each cup to about 2/3 full. Bake in a preheated oven at 180 °C for about 20–25 minutes, or until the muffins are golden and slightly crispy on the surface.
  4. Serving: Serve warm or cold. These muffins are great for breakfast or a light lunch.
