Ingredients

  • 2 eggs
  • 2 tomatoes
  • A handful of mushrooms
  • 1 can of beans in tomato sauce
  • 4 slices of toast
  • 2 tablespoons vegetable oil
  • Butter
  • Salt and pepper

Preparation Steps

  1. Prepare all ingredients first: cut the tomatoes in half and slice the mushrooms (if using portobello, remove the stem and cook them whole).
  2. In a pan, heat oil and fry the sausages with bacon.
  3. In another pan, sauté the mushrooms. Place the tomatoes in the pan with the sausages, cut-side down, and cook until slightly charred and shriveled.
  4. When the meat, tomatoes, and mushrooms are almost done, prepare the fried eggs. English-style fried eggs should have browned edges and a slightly runny center.
  5. Serve everything on a large plate with heated beans in tomato sauce and a slice of toasted bread.
