Beans with Sausages in Tomato Sauce

Ingredients

  • 400 g beans (canned, drained)
  • 1 can of tomato paste (400 g)
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon sweet paprika
  • Salt and black pepper to taste
  • 1 teaspoon sugar (if needed to balance the acidity of tomatoes)
  • 1 bay leaf
  • Fresh herbs for garnish

Preparation Steps

  1. Preparing the Sausages: Fry the sausages in a pan with a little oil over medium-high heat until golden brown on all sides. Remove them from the pan and set aside.
  2. Making the Sauce: In the same pan, add a little olive oil and sauté the onion until translucent (about 5 minutes). Add garlic and cook for another minute until fragrant.
  3. Adding Beans and Tomatoes: To the onion and garlic, add the tomato paste, bay leaf, sweet paprika, and sugar. Season with salt and pepper. Bring to a boil, then add the drained beans.
  4. Simmering: Place the fried sausages in the tomato sauce, reduce the heat, and let it simmer on low for about 20 minutes, stirring occasionally.
  5. Serving: Serve hot, garnished with fresh herbs. You can enjoy it with bread or a side dish of your choice.
